Andes Mint Cupcakes

  My favorite flavor combination's generally consist of two things, chocolate and ANYTHING ELSE! But in my top ten would be mint. I love chocolate and mint. The two flavors together take me back to Christmas and my grandmothers chocolate mint fudge, playfully resembling and Andes Mint with two layers of chocolate fudge encasing a minty fudge filling. These chocolate cupcakes are filled with chocolate ganache and a single Andes Mint. To top off the cupcakes, I added a swirl of green mint buttercream and finished with crushed Andes! This cupcake is such a treat and sweetly refreshing.
